aloo bhendi

ingredients
  • 1/2 kg lady fingers chopped(washed and wiped dry)
  • 2 small potatoes (diced)
  • 2 medium onion finely chopped
  • 1/2 tsp cumin seeds
  • 15 cloves garlic(indian) crushed
  • 2 tsp chilli pwd
  • 1 tsp coriander pwd
  • 1/2 tsp cumin pwd
  • 1/2tsp  turmeric pwd
  • 1/2tsp  amchur pwd
  • salt to taste
  • 3 tbsp oil
method
  1. Place a pan on medium flame, add oil,when hot add cumin seeds,when the seeds splatter add in the onion and crushed garlic and fry till onion turns translucent.Now add chilli pwd,coriander pwd,cumin pwd,turmeric pwd and fry till the oil seperates.
  2. Now add the chopped potatoes fry till well combined and cover and cook on medium low flame till the potatoes are 90% cooked. Now add in the ladyfingers, amchur pwd and salt and stir well. cover and cook till done.
  3. serve with chappati.
