Slutty Brownies - Happy Birthday Devs

Someone once said "You can kid the world, but not your sister"
Wish you a very happy birthday Devina.......miss you EVERYDAY....


No.....I did not come up with that name, I was wondering why it is called slutty brownies.....I would actually name them 'Threesome Brownies"......and before you guys start thinking ...."Gosh!!!this Cherie has one dirty mind"....NO....you are wrong....when I say "Threesome".....I mean....Oreo biscuits sandwiched between Brownie and Chocolate chip cookies.... doesn't that make it awesome THREESOME.....and also a perfect name for us three sisters....Devina is the soft heart Brownie......Neetu who seems hard from outside but is actually soft like a cookie inside......and Iam the poor Oreo biscuit in the middle who has been sandwiched by these girls and I have nowhere to go......but together we make an awesome threesome combination.

Ingredients

for the brownie

  • 140 grams unsalted Butter (10 tbsp)
  • 1 1/4 cup Sugar
  • 3/4 cup Cocoa powder
  • 2 large Eggs
  • 2 tsp Vanilla extract
  • 1/2 tsp salt
  • 1/2 cup All purpose flour
for Oreo layer
  • 25 Oreo cream biscuits
for chocolate chip cookies layer
  • 113 grams unsalted Butter ,softened (1/2 cup)
  • 1/4 cup Brown sugar
  • 3/4 cup White sugar
  • 1 Egg
  • 1 1/4 tsp Vanilla extract
  • 1 1/4 cup All purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp salt
  • 1 cup semi sweet Chocolate chips
Method
  • Line a 9 inch square baking tray  with aluminium foil with 3 inch foil sticking out from either sides (this helps in lifting out the brownies from the tray. Set aside.
  • Prepare brownie batter : Take melted butter in a bowl and toss in sugar and cocoa powder ,mix well till combined with a whisk, now add the eggs and vanilla extract and whisk well. Now add flour and salt and whisk till you have a smooth thick batter.Set aside.
  • Pre heat the oven at 180 degree c
  • Prepare the cookie dough:  Take the softened butter in a bowl and add in the brown and white sugar, using an electric beater ,beat this till soft and fluffy. Add egg and vanilla extract and beat till well combined and scrape down the sides and beat again.
  • In a bowl sift together flour,salt,baking powder and baking soda and add this to the butter mixture and beat on low speed till all the ingredients are well combine and you are left with a soft dough.Now toss in the chocolate chips and mix with a spatula.
  • Assemble : Place the cookie dough on the prepared tray and spread out evenly.Place the oreo biscuits on the cookie dough closely.Now pour the brownie batter on the oreo biscuits and spread evenly.
  • Bake in pre heated oven for 30 to 35 minutes or till the brownie is done.
  • Let the brownie cool down completely before cutting into squares.
  • Serve warm with vanilla ice cream.

Truffle brownies ....for a Sweet Punch

 Just one word ......... 'SINFUL'.........yes......I guess that says it all.


I recently joined A Sweet Punch a forum started  by Ria (Ria's Collection), Divya (Easycooking) and Maria(Marias menu)....its all about my favorite things cakes, cupcakes and mousse,souffles,pies, tarts and quiches,brownies and cookies............wohoooo too much sugar rush for one day.

This months Sweet punch was our own personal choice.....and I made these sinful Truffle Brownies....its maddening.....try it...you will fall in love..

Ingredients
  • 170g Bittersweet Chocolate, chopped
  • 113g + 3 tbsp unsalted Butter, cut to cubes
  • 1 1/4 cup Sugar
  • 3 Eggs
  • 11/2 tsp Vanilla Essence
  • 1/4 tsp Salt
  • 1 cup Flour
  • 1 cup Walnuts, toasted and chopped
For Ganache
  • 3/4 cup Cream
  • 170g Bittersweet Chocolate,chopped

Method
  1. Preheat oven to 180 Degree C.
  2. Line a 9 inch square baking pan with aluminium foil with the sides handing out (this helps in lifting out the brownie easy). Spray the foil with non stick oil or grease with butter.
  3. In a medium bowl combine 170g chocolate with butter and set over a bowl of simmering water, till the chocolate and butter is melted and well combined and smooth.Let the chocolate mixture cool for 10 to 15 minutes.
  4. In a bowl whisk sugar,eggs,vanilla essence and salt and combine.Now add the chocolate/butter mixture.Stir in the flour and chopped walnuts and mix slowly till well combined(do not beat the batter at this point,carefully fold in the flour).
  5. Transfer the batter into the prepared baking pan and bake in the preheated oven for 30 minutes.
  6. Place the pan on a wire rack and let it cool completely.
  7. Prepare ganache:-Pour the cream into a thick saucepan and bring to simmer over medium low heat.Remove from the heat and add the remaining 170g of chopped chocolate into the hot cream.Let the it stand for 5 minutes.Whisk till all the chocolate is melted and looks smooth.
  8. Pour the ganache over the brownie and spread out evenly.Let the ganache set in room temperature for 4 hours (I let it set overnight).
  9. Lift the brownie out of the pan using the aluminium foil.Cut to desired shape using  large knife,wipe the knife with hot moist cloth after each cut.
  10. Warm the brownie in the microwave for few seconds and serve with a scoop of vanilla ice cream.

You know you brownies are done when.......

 You will see that brownies will start leaving the sides of the baking tray.
Second,a thin layer forms on top of the brownie,almost like a second layer of skin.
Third, when you press the brownies at the edges it will spring back a little.
And fourth, unlike cake, brownies cannot be judged by inserting the toothpick and see if it comes out clean. When you insert a toothpick, you will see crumbs stuck to it.

Mocha Brownies

I missed my oven, the last thing I baked was espresso cake,after that I took a break. Mom and granny keep complaining that I don't make any thing spicy for them ,both of them don't like sweets(for obvious reasons). 

Yesterday when I checked my bookmarked  recipes,I realized that 90% of the recipes were cakes and brownies. Guess that's were my heart gets pulled to. I had to bake.My oven was calling out.

Mocha Brownies everyone

Ingredients
  • 8 tbsp Butter (1 stick /113grams) I used 100 grams
  • 1 cup all purpose flour (maida)
  • 1/4 cup cocoa powder (I used hersheys)
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 2 tsp espresso powder
  • 8 ounce semi sweet chocolate (270 grms)
  • 3 large eggs
  • 1 tsp vanilla essence
  • 1 1/4 cup sugar


Method

1.Grease and line a 9 inch baking tin with baking paper.The baking paper should be extending out so that you can just lift the brownie out once its baked.

2.Preheat the oven at 180 degree C.
3.In a bowl sieve flour, cocoa powder, salt and baking powder . Keep this aside.
4. Melt butter and semi sweet chocolate over a bowl of simmering water. When the chocolate melts remove from flame and add sugar and mix well, now add lightly whisked eggs, vanilla essence and espresso powder. Mix well.
5. Fold in the flour mixture and beat slowly till well combined and moist (do not over beat)
6. Pour the batter into the prepared baking tin and bake for 45 minutes.

There are ways to know if your brownie are done. Unlike cake, brownies cannot be judged by inserting the toothpick and see if it comes out clean.
One way to know is that you will see the brownies will start leaving the sides of the baking tray.
Second, a thin layer forms on top of the brownie, almost like a layer of skin.
Third, when you press the brownie at the edges it will spring back a little.
And fourth, when you insert a toothpick,you will see crumbs stuck to it.

7.After the brownies are done, remove from oven. Lift the brownie from the baking tin and leave on a wire rack and let it cool completely before cutting.
8.Heat the brownie in the oven for few seconds and serve with vanilla ice cream or eat just like that.
