Vanilla Cupcake with Chocolate Ganache


I KNOW!!!!!!!!.......the vanilla cupcake is totally lost........thanks to the sinful looking ganache.....it has stolen all the limelight.......Please do not be blinded by the ganache and forget my vanilla cupcakes.....coz they are beautiful soft spongy pillows that just melt in your mouth and the orange zest works like magic which makes these cupcakes extra special......these come under my 'Have to make every month' list and 'Vanishes in seconds' list.

Ingredients
For Vanilla Cupcake
  • 113 grams Butter , softened (1/2 cup)
  • 130 grams Sugar (2/3 cup)
  • 3 large Eggs ,room temperature
  • 1 tsp Vanilla Extract
  • Zest of one Orange or Lemon
  • 195 grams Flour (1 1/2 cup)
  • 1 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 60 ml Milk (1/4 cup)
For Chocolate Ganache
  • 300 grams Dark Chocolate
  • 200 ml Cream

Method
For Vanilla Cupcake
  1. Preheat oven at 180 Degree C , line muffin trays with cupcake cases.
  2. Mix orange / lemon zest , flour,baking powder and salt in a bowl and set aside.
  3. In a bowl beat butter an sugar till light. fluffy and pale,add one egg at a time,beating after each addition.Now add vanilla extract.
  4. Add flour and milk in 3 batches,starting and ending with flour mixture and beating in medium speed after each addition.
  5. Using an ice cream scoop divide the batter into the cupcake cases and bake for 15 to 25 minutes or when toothpick inserted comes out clean.
  6. Remove from the oven and transfer onto a cooling rack.let the cupcakes cool in the muffin trays.
  7. Once cooled completely pipe chocolate ganache on top.
Method for Ganache
  1. Keep grated chocolate in a heat proof bowl.
  2. Pour cream into a saucepan and place on medium flame.Remove once small bubbles start forming in the sides of the saucepan.Do not boil.Pour this hot cream on the chocolate and let stand for a minute.
  3. Mix till all the chocolate melts and you are left with smooth ganache.
  4. Let  it cool down completely, the ganache will thicken, transfer into a piping bag and pipe the cupcake with the ganache.

Nutella filled Chocolate Cupcake with Nutella Frosting - My first Guest Post


Have you ever felt weak at your knees....it happens when.....you experience something amazing........when you get a glimpse of someone you have been waiting to see for a long time......when you are kissed like you have never been kissed before.......oh ya it also happens when you are shit scared.......But...in my case......my knees did go weak when I had a bite of this crazzzy crazzzyyyy yumilicious  Nutella cupcake......I seriously got turned on....like seriously....or should I say in my sister Neetu's words 'My mouth had an organism' - -read it any way you want to.....If you get it- GOOD......if you don't EVEN BETTER.

I think I better give this post an 'A' rating

Nigella's Double Chocolate Chip Muffins


Seriously...I cannot get enough of chocolate...Is it just me or do I have an overdose of chocolate recipes in my blog.....I don't care ....you are gonna see more chocolate anyway.

I don't like to brag ;)......but believe me....... these are super simple .......amazing.......yummilicious.......with an attitude ....... muffins(does that even make sense).





Ingredients

  • 1 3/4 cup All purpose flour
  • 2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 4 tbsp Cocoa powder
  • 3/4 cup Caster sugar or powdered sugar
  • 3/4 cup Semi sweet chocolate chipes
  • pinch salt
  • 1 cup Milk
  • 1/3 cup + 2 tsp Vegetable oil
  • 1 egg
  • 1 tsp Vanilla
  • 1/4 cup Chocolate chips to sprinkle




    Method
    1. Preheat oven at 190 Degree C.Place muffin paper cases into a muffin tray and set aside.
    2. In a bowl whisk or sieve together all the dry ingredients- flour, baking powder, baking soda, salt, caster sugar and cocoa powder. Add 3/4 cup chocolate chips and mix well.
    3. In another small bowl combine all the wet ingredients - oil, milk, egg and vanilla.Whisk lightly using a fork.
    4. Pour the wet ingredients into the dry ingredients and whisk lightly , do not over mix.
    5. Using an ice cream scoop divide the batter evenly among the muffin cases.
    6. Sprinkle remaining 1/4 cup chocolate chips on top of each muffin.
    7. Bake in the preheated oven for 18 to 20 minutes or when inserted with a toothpick comes out clean.
    8. Transfer onto a wire rack and let the muffins cool completely before digging in.

    Candy Cupcakes


    Candy Cupcake for crossing 1 lac views after 7 months of  blogging..........no actually I made these cupcakes for my daughter...she just loved it...each bite she took...she kept asking me..."did you make it?"..."did you make it?"....I knew exactly why she kept asking me that.....she dragged her friend in...and I offered her the cupcake and my daughter said proudly..."My mom made it"...little did she know that these were the simplest cupcakes ever made...but her expression was worth a million.

    Seven months back...my husband was about to go to bed and I asked him "How do I start my own blog?" and he told me yawning..."Ok ...I will tell you later" and he slept. My brain was so hyper at that moment and I just could not wait...I am not tech savvy...so if I have a doubt I turn to my best friend.....Google....and I asked Google the same question I asked my Husband "How do I start my own blog?".....when my husband got up.....my blog 'Cheries Stolen recipes' was ready.So moral of the story 'Google is better than a Husband' (Just joking....for those who don't get my sense of humor).......

    The journey since then has been amazing...This blog has definitely changed me in many ways.....I am a more confident person now......learnt so much about Mangalorean food and in the process connected with my Mother, saw a whole new side of her....she is more of a friend to me now and got to try out dishes I never thought I could make....I would like to change my profession from a Housewife to......'Housemaker/Blogger'

    I would love to thank all my viewers and fellow bloggers for helping me get so far, it would not have been possible without you guys...(ok that was sooooo not me....it was so cliche...sounded like some Oscar speech by some boring actor)

    Ingredients
    • 80 g Butter (softened)
    • 1/4 tsp vanilla Essence
    • 2 eggs
    • 1/3 cup(75g) Caster sugar
    • 1 cup (150g) All Purpose Flour
    • 2 tsp Baking powder
    • 2 tbsp Milk or Soya Milk
    • few candies
    Method
    1. Preheat oven to 180 Degree C. Line the cupcake pan with cupcake cases.
    2. In a bowl combine butter, vanilla essence, caster sugar, eggs, sifted flour and baking powder.Using an electric whisk beat on low speed till all ingredients are well combined.Now beat on medium speed for 2 minutes or till the batter looks pale in color.
    3. Divide the mixture into the paper cupcake cases using an ice cream scoop.Bake in the oven for 15 minutes. remove from the oven and place candies on top of each cupcake.Bake for 5 more minutes or till the candies melt (I did not wait till then, I prefer my candies whole)
    4. Let the cupcakes stand in the pan for few minutes ,then transfer onto a wire rack and cool completely.

    Mars Fudge Mud Cakes

    I have used the following sentence before for one of my dishes....Iam going to use it again

    I had this.......died......went to heaven.....and came back coz I knew there was more waiting for me.

    I mean seriously ...this is EVIL mud cake...my legs felt weak after eating this....this was so so sooooo good, and I had double the fun coz I baked it with my sister Devs. We prepared the batter and put it in the oven..I told Devs..... "its going to take 20 minutes to bake" , Devs said..... "Okay" and I left the kitchen ,when I returned after 10 minutes, Devs was sitting on a chair right in front of the oven just staring at the cupcakes...

    This is a MUST TRY for everyone, you won't be disappointed (I don't like to advertise my dish much ...but this one is worth it). So Shireen  (Ruchik Randhap) thank you for commenting on all my post  and you see I wasn't exaggerating when I said that " I had 4 cupcakes after eating the healthy fish :)"   in my previous post :)))

    Ingredients

    • 120 grams Mars Bar
    • 150 grams butter , chopped coarsely
    • 150 grams dark eating chocolate , chopped coarsely
    • 1/2 cup (110grams) firmly packed brown sugar
    • 1 cup (250 ml) water
    • 3/4 cup (110grams) plain flour
    • 3/4 tsp Baking Powder
    • 2 eggs
    Chocolate Fudge Frosting
    • 50 grams dark eating chocolate , chopped coarsely
    • 25 grams butter
    • 1 cup (160 grams) icing sugar (sieved)
    • 1 tbsp cocoa powder
    • 2 tbsp hot water , approx


    Method
    1. Preheat oven to 180 Degree C, place muffin cases in muffin pans .
    2. Chop 2 Mars bar finely and cut the remaining bar into thin slices to top the cake.
    3. Combine butter, dark chocolate, brown sugar and water in a saucepan , stir over low heat till smooth. Transfer to a large bowl and let it cool for 10 minutes. Whisk in the sifted flour and baking powder, add the eggs and chopped Mars bars. Mix well.(the batter will be thin)
    4. Divide the batter into the muffin cases and bake for 20 to 25 minutes. Let the cakes stand in the tray for 5 minutes. Transfer to a wire rack and let it cool completely before frosting.
    5. Method for fudge frosting : Stir chocolate and butter in a small heatproof bowl over small saucepan of simmering water until smooth. After the chocolate had melted remove from heat.Stir in the sifted icing sugar and cocoa powder. Stir in enough hot water until frosting is spreadable.
    6. Cover the cupcakes with prepared frosting and top each cupcake with a slice of Mars bar.
