I have taken this recipe from Manjula aunty, no she is not my aunt,she has a very famous blog called manjulaskitchen.com, believe me if you watch her videos you will start calling her aunty too,most of her viewers do.I have made few changes to the filling,coz I like it spicy. this recipe makes 8 aloo parotas.This is our breakfast dish,we have it with yogurt and pickle.
Ingredients for potato fillings
4 medium potatoes (boiled and mashed)
salt to taste
1/2 tsp cumin seeds
4 chopped green chillis
1 tbsp ginger chopped
1/2 tsp turmeric powder
2 tbsp lemon juice
1/4th cup wheat flour for dusting
2tbsp chopped coriander leaves
oil
Method
* In a small pan add oil, when its hot add cumin seeds, when it crackles add turmeric,salt , green chillies and ginger. Fry for 30 seconds. Take it of the flame and add lemon juice . Pour this mixture into to mashed potatoes and mix well.
* Divide the dough and potatoes to 8 equal parts. Potato balls should be larger than the dough balls.
* Roll the dough to small circle, place potato balls, cover( watch video) and keep it aside for few minutes.
* Roll out the dough into chappatis and fry on a hot pan and apply ghee or oil.
* Serve with yogurt sprinkled with cumin powder or pickle.

for wheat dough
2 cups wheat flour
water as required to make soft dough
1 tsp salt
Method
* Mix all the ingredients and make a soft dough and keep it aside.

ReplyDeleteI feel small parotas would rather b be better than the bigger ones, ...coz all the stuffings comes out in bigger one....
ReplyDeleteAlso rolling should be done gently than harder as for chapatis....
