Nutella ,Banana & Walnut Roll


Soft bread.......rich creamy buttery Nutella......... crunchy walnuts...........Banana........this is one combination that can never go wrong........unless you have the audacity to hate Nutella......which is a crime....



Ingredients

  • 1 1/2 cup Flour (maida)
  • 1/2 cup warm milk
  • 3/4 tbsp yeast (1/2 tbsp if using instant yeast)
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tbsp + 1 tsp oil
  • 4 tbsp or more Nutella
  • 2 tbsp Butter , softened
  • 2 Bananas, thinly sliced
  • 1/2 cup Walnuts , toasted and roughly chopped
Method
  1. Prepare nutella spread :-In a small bowl mix nutella and butter and mix well, keep aside.
  2. Prepare dough :- In a small bowl pour in 1/4 cup lukewarm milk, sugar and yeast, mix till yeast dissolves. Keep this aside for few minutes till the mixture looks frothy.
  3.  Now in a large bowl mix flour, salt, yeast mixture and remaining milk and form a sticky dough. Oil your fingertips and knead the dough until it springs back when you press with your fingers, 6 to 7 minutes.Cover the bowl with cling wrap and allow it to double (keep in a warm area). This will take 45 minutes to 1 hour.
  4. Once the dough doubles, punch the dough to remove the air and knead again for few minutes.
  5. Prepare a baking dish, grease with oil and keep aside. 
  6.  Divide the dough into 2 equal parts.Place one portion dough on a flat surface. Use little flour if the dough is very sticky.Roll the dough into a rectangle with 1/2" thickness.
  7. Spread evenly 1/2 of the nutella mixture on the rolled out dough.Place half of the sliced bananas and half of the chopped walnuts on the nutella spread.Roll from one end.Cut the roll into halves.
  8. Then cut each half into halves to get 4 rolls.Repeat the same with the other portion of dough.
  9. Place the rolls in a greased dish with cut side up and brush the top with milk.
  10. Allow the rolls to rise for about 20 minutes.
  11. Place in a preheated oven for 25 to 30 minutes at 180 degree C,or till the top looks golden brown.
  12. Serve warm

Banoffee Pie......for A Sweet Punch



This months Sweet Punch challenge was ...Banoffee Pie......this pie is filled with amazing goodness and yet so simple...I always wanted to make Dulce de Leche.....once you have made that.....then you have a super simple dessert ready in minutes.....you gotta try this one.......

Ingredients

  • 150 g Digestive Biscuits
  • 30 g  Butter (melted)
  • 200 gms Dulce de Leche
  • 2 tsp Instant coffee powder
  • 1 Banana (sliced)
  • 200 ml Cream
  • 2 tbsp Icing powder
  • 1 tsp Vanilla essence
  • 2 tsp Cocoa powder for dusting

Method
  1. Powder digestive biscuits in a blender to fine powder, now add the melted butter and pulse till well blended.
  2. Preheat the oven at 180 degree C for 10 minutes.


3.Transfer the powdered biscuits into a  6 inch pie dish or tart pan with removable base. Press the powdered biscuits firmly with your hand and spread evenly,cover the sides of the pan too.
4.Place on a baking tray and put it into the hot oven and bake for 10 minutes (till the biscuit base looks little brown).Let this base cool completely.


5.Once the biscuit base is cooled, spread the dulce de leche on the base . Dip a spoon into hot water and using the back of the spoon spread the dulce (this makes it easier to spread the dulce).
6.Using a small sieve dust coffee powder on the dulce.


7.Now place the sliced the banana on the coffee powder.


8.Whip fresh cream with icing sugar and vanilla essence till soft peaks are formed. Transfer to a piping bag and pipe on top of the sliced bananas.


9. Dust cocoa powder on the cream.

Dulce de Leche



This is pure magic, when I opened this tin of condensed milk......I closed my eyes and prayed it would look exactly like how I had hoped it would...........and .......you get to see this amazing color....its just beautiful caramel ....its pure magic.

I wanted to make Dulce de Leche long back and came to know that its usually prepared by immersing the condensed milk tin in water and cooked for 3 hours.......I know ......3 hours....I was like.....forget it.....my mom would just set my head on fire....with all the gas prices shooting up....then I came across Divya's Easycooking blog...where she had used the pressure cooker method....I would not be surprised if it was an Indian who actually came up with this idea.....its just so amazing and time saving....though I did tell everyone to vacate the kitchen......just in case......(just kidding)

Ingredients
  • 1 tin Condensed Milk
  • Water

Method
  1. Place the condensed milk tin inside a pressure cooker, fill enough water to cover the tin.
  2. Cover with lid and place the cooker on high flame, when the steam comes place the weight.After the first whistle reduced the heat to low and cook on simmer for 30 minutes.
  3. Take the cooker off the flame and let it cool down to room temperature.
  4. Remove the tin from the cooker and store in the fridge till further use.

Mangalore Buns

I have fond memories whenever I think of Buns, my dad is from Bailur (small village near Karkala, South Canara). Every summer vacation a visit to Bailur is what I used to look forward to. 

There is this tiny hotel in Bailur , I don't know the name but I remember my dad saying "Gadiyarda  buns podu kanaka" (lets get buns from gadiyar), I never bothered to ask my dad, I just assumed the name of the hotel to be Gadiyars and we still call it that. I have never had buns anywhere as good as Gadiyars.I remember seeing my  Dad and my Kutta thiddi (uncle) leave the house  to get buns from Gadiyars for evening tea. I used to peep out the window of our 150 years old beautiful house (I miss that house) waiting eagerly for my dad and uncle to return with buns tied up in newspaper.It was such a treat.

I miss those days when the whole family- granny, uncles, aunts,cousins all get together to eat hot buns with our evening tea.

Ingredients

  • 1/4kg or less All purpose flour (maida)
  • 3 small bananas
  • 2 tbsp curds
  • 4 tbsp sugar (an adjust to taste)
  • 1/2 tsp salt
  • 1/4 tsp soda bi carbonate
  • 1/2 tsp cardamom powder
  • 1 tsp cumin seeds
  • 1 tbsp ghee/oil
  • oil for deep frying


Method

  1. Mash bananas in a bowl and mix in curds, soda,cardamom powder, salt, sugar and ghee.
  2. Add flour little at a time and mix in till well combined.Knead to form a semi stiff dough.
  3.  I did not use all the flour, and don't use water while kneading, the wet ingredients will have enough moisture. 
  4. Cover and keep in a warm area for 8 hours or overnight.
  5. Make small balls and roll thick.
  6. Deep fry in hot oil till they puff up and turn golden brown.
  7. You can eat buns just like that.
  8. The dough can be stored in the fridge for up to a week.
