Pepper Chicken


 Ingredients

  • 1 kg chicken (with bone)
  • 4 medium onion (roughly chopper)
  • 10 cloves garlic
  • 1 inch ginger
  • 6 green chillies
  • 3 tsp pepper
  • 1/2 tsp turmeric                 
  • 3 tbsp soya sauce
  • 3 tbsp green sauce
  • 1 capsicum (optional)
  • salt to taste
  • 3 tbsp oil
Method
  1. Grind onion,ginger,garlic and 3 green chillies into a smooth paste.
  2. Keep pan on medium flame,add oil,when oil is hot add the ground onion paste and fry till the raw smell goes.
  3. Now add pepper,3 green chillies slit lenghtwise and turmeric and fry till the oil separates.
  4. Add soya sauce and green chilli sauce and stir for a minute,now add the chicken and salt.mix well,cover and cook.
  5. When the chicken is almost cooked add chopped capsicum and cook for few more minutes.Add water if you want a thinner gravy.
  6. Serve with chappati or mixed fried rice

baked potato wedges

These are super simple potato wedges,kids just love it,I know my daughter does.
ingredients

  • 2 large potatoes
  • 2 tbsp oil(olive oil or vegetable oil)
  • 2 tsp paprika (you can also used red chilly powder but reduce the quantity)
  • 2  tsp dried herbs(optional) I used rosemary
  • 1 tsp crushed pepper
  • salt to taste
Method
  1. Pre heat oven for 10 minutes at 200 degree C.
  2. Wash potatoes well,cut the potatoes to half,then cut each halved potato into 4 to 5 wedges, don't remove the skin of the potatoes(potato wedges must be almost the same size for even baking)
  3. Put all the potato wedges into a mixing bowl, add paprika(or red chilly powder),pepper,oil,salt and dried herbs, mix well.
  4. Line a baking tray with parchment paper or silicon sheet (this is to avoid the potato wedges from sticking to the tray)
  5. Place the wedges on the tray and bake for 20 minutes at 200 degree C,after 20 minutes remove the baking tray and turn the wedges around and bake for 15 minutes at 200 degree C(if you want to reduce the baking time ,cut the potatoes in to smaller and thinner pieces.)
  6. After 15 minutes,remove from oven, transfer to a plate and serve with tomato sauce.

soppu saar -greens curry

This recipe is for Latha doddamma ,who can have soppu saar with rice 365 days of the year,
I would like to thank Ratnamma for the recipe.
This curry goes well with rice and ragi mudde

Ingredients

  • 3 bunch of greens (3 different types)
  • 3 tomatoes
  • 1 medium onion (roughly chopped)
  • 4 -5 green chillies
  • 1/2 cup tovar dal
  • 3 tbsp coriander leaves
  • 10 cloves garlic
  • salt
for seasoning
  • 2 tbsp oil
  • 1 tsp mustard
  • 1 red chilly (dried)
  • 10-12 curry leaves
  • 1 tsp cumin seeds 
  • pinch hing

method

1.Put tovar dal,tomatoes,green chillies,coriander leaves,chopped greens,onion,,garlic and 1 cup water into a pressure cooker and cook for 3 whistles or until completely cooked.

2. Remove the cooker lid and mash the greens.

                  
3. keep a vessel on medium flame,add oil,when oil is hot add mustard seeds and when it splatters add rest of the seasoning ingredients,fry for few seconds then add the mashed greens and salt and bring to boil.
4.serve with rice or ragi mudde.

nan khatai

Indianised Short bread cookies

 Ingredients

  • 1 1/2 cup Flour (maida) seived
  • 3/4 cup powdered sugar (I used icing sugar) sieved
  • 1/2 + 1/8 cup ghee(melted)
  • 1/8 tsp cardamom powder
  • pinch salt

 Method
1.Pre heat oven at 160 degree C for 10 minutes.
2.Place parchment paper or grease a baking tray and keep aside.
3. In a bowl mix together flour, sugar, cardamom,salt and ghee, form a soft dough.
4. Divide the dough into equal portions and shape into balls and place on baking tray.
 5.Bake at 160 degree C for 15minutes.
6. Remove from oven and cool on wire rack.
7.Store in an airtight container.

chicken cutlet


ingredients
  • 2  chicken breasts cubed or 250 grms minced chicken
  • 2  medium sized potatoes (boiled)
  • 1 medium onion finely chopped
  • 4  green chillies
  • 1 tsp ginger garlic paste
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp garam masala powder
  • 1/2 tsp turmeric powder
  • salt to taste
  • 1/4th cup chopped coriander leaves
  • 1 egg (beaten)
  • 1 cup bread crumbs
  • oil 
method
  1. Place a pan on medium flame ,add 2 tbsp oil,when hot add onion and fry till translucent,now add ginger garlic paste,fry till the raw smell goes.Now add all the masala powders, salt and green chillies and fry till the oil separates.
  2. add the chicken and cook till the chicken is done, if using cubed chicken,break it up with a spoon to small bits.now add in the chopped coriander leaves. let the chicken be a little salty because when you add in the mashed potatoes the taste will be just fine.
  3. remove the skin of the potatoes and mash them well, mix in the chicken mixture and make small balls and keep aside.
  4. dip the chicken cutlets in the egg remove excess egg and coat the cutlets with bread crumbs. arrange all the cutlets this way.
  5. heat oil for frying, you can deep fry or shallow fry the cutlets till they turn brown.
