biscuit pudding with caramelised coconut

Have you ever had a dish long back that you liked a lot but never had it again,and that taste lingers even after many years.This is one of those dishes,I remember when I was kid and one my cousins (Pranithi akka) had made biscuit pudding and just loved it,here I have tried to recreate that dish.

Ingredients
  • 1 litre milk
  • 7 tbsp sugar
  • 5 tbsp custard powder
  • 4tbsp coco powder
  • 2 tbsp instant coffee powder
  • 1packet marie biscuit
  • 1 cup black coffee ( 1 tbsp instant coffee pwd mixed into 1 cup hot water and 3tsp sugar)
  • 1 1/2 cup whipped cream (optional)
Method
1. From 1 litre milk,remove 1 cup milk and keep aside.Boil the rest of the milk with 7 tbsp sugar.
2.Add custard powder, cocoa powder and coffee powder to the 1 cup milk that has been kept aside. Mix well,till all the lumps are dissolved.
3. when the milk comes to a boil add the custard, coffee,cocoa and milk mixture,stirring while doing so.Cook till the custard mixture thickens a little.take off the flame and let it cool.
4.Prepare a serving dish, dip the marie biscuit into the black coffee and place it in the serving dish(as shown below)









5.pour half of the chocolate /coffee custard over the coffee dipped biscuits.
6.sprinkle the caramelised coconut over the chcocolate custard.
7. repeat the biscuit dipped in coffee layer.

 








8. pour rest of the custard on top of the biscuits.
9. Now spread the whipped cream over the custard.
10. Sprinkle caramelised coconut over the cream.
 








11. refridgerate before serving for 3 hrs.

  6. Hi...how long ahead can I prepare the caramelised coconut? Won't it become soggy if I put it in the fridge a day ahead of serving?

    1. hi>>>sorry for the late reply...after roasting the coconut...cool it down and store in airtight container and store in room temperature...it will be good fore upto two days...thank you
